Jalapeno Peppers
After washing the peppers I began slicing them up. I wore gloves because handling that many peppers and their juice can burn your fingers. I added 2 whole onions to the peppers and put them into a brine. The brine I used is as follows:
2 Cups Sugar
2 Cups Water
2 Cups Apple Cider Vinegar
1 1/2 tsp. Pickling Salt
Add ingredients together and heat until dissolved. Add your peppers and onions, heat until peppers begin to change slightly in color. Fill your jars with peppers and brine leaving 1 inch space from the top. Wipe off rims and put on tops. Process in boiling water bath for 10 minutes. Remove and set on towel and leave for 24 hours. Then check to make sure there is a good seal.
I did do 2 pints of these Jalapeno peppers using the regular white vinegar. I am looking forward to seeing which one my family likes the best.

This is my finished product. After a few minutes or so of putting them on the towel to start cooling, you can hear the lids pop making a seal.

Banana Peppers
This is my finished product from my banana peppers. The brine I used in this recipe is as follows:
2 Cups White Vinegar
2/3 Cup White Sugar
1/2 tsp. Mustard Seed
1/2 tsp. Celery Seed
I processed these the exact way as described above for Jalapeno Peppers.
I am still not finished with peppers. I have cayenne peppers that still need to be processed but as I am now worn out they will have to wait until tomorrow. I winded up with 7 pints of Jalapenos and 2 pints of Sweet Banana Peppers.
